When I was about to travel home after a long time, my mother called me the day before to ask me about the food I would like to eat.
My answer was always “Polenta with Cottage Cheese”, and she went mad all the time that I chose the cheapest and easiest meal ever.

You can upgrade it with bacon. You can upgrade anything with bacon.
Polenta with Cottage Cheese
The low-cholesterol version of this dish.

- 500 g polenta
- 500 g cottage cheese
- 300 ml sour cream
- 1 tbsp sunflower oil
- salt
Bring the water with salt to boil in a large saucepan. Pour the polenta slowly into boiling water, whisking constantly. Reduce the heat to low and simmer, until the polenta is thick, about 5 minutes. Meantime, in a small saucepan melt the sour cream with the sunflower oil.
In a bowl, scoop a layer of hot polenta, spread with cottage cheese, and pour the warm sour cream sauce over the cheese. Use this procedure until the ingredients are gone.
On the first picture, I used soft cheese and fried smoked bacon. It is hard to tell, which one is better.
