On a rainy morning, Mr. Duck had decided to run away, in hope to find a better place.

He found The Oven, and he never returned…

Orange Duck with Rocket and Pomegranate

  • 1 whole duck
  • juice of 1 and a half orange
  • half of an orange diced is small pieces
  • 2 tsp honey
  • salt

Rub the whole duck with salt. Pour 200 ml water on the bottom of a pan, and place the duck in the pan, with the breast down. Roast in a preheated oven at 210 °C. Meanwhile, bring the orange juice, honey, and diced orange to boil. Simmer until the orange sauce is thick. After one hour of roasting, sprinkle the duck thoroughly with sauce, and turn it over. Roast for one more hour, until the meat is tender. Sprinkle with its own juice occasionally. Serve with butter roasted baby potatoes and a fresh rocket and pomegranate salad.

Rosemary Duck with Roasted Vegetables

Rub the whole duck thoroughly with salt and pepper, placing a few rosemary sprigs in the inner part of the duck. Roast it for one hour with the duck breast turned down. After one hour of roasting, turn it over and place the vegetables in the bottom of the pan. Roast them all together for one more hour, until everything is soft and tender.
